Ground Pork Stew (Menudong Baboy na Giniling)


Ingredients

3 tablespoons vegetable, or olive oil
4 cloves garlic, minced
1 medium yellow onion, chopped
½ cup dice potatoes
½ cup diced carrots
1 pound ground pork
5 oz. (no salt added) tomato paste
2 tablespoons low-sodium soy sauce
1 cup unsalted chicken stock
2 dried bay leaves
½ cup chopped beef/pork sausage or hotdog
1 tablespoon sugar
⅓ cup green peas
1 ½ cups fresh spinach, (we like spinach a lot, but of course, not everyone is like us so this one is) optional
3 red hot capsicum, thinly sliced
Salt and ground black pepper

Directions

Heat oil in a deep skillet over medium heat. Add the garlic and onion, and sauté for 1 minute. Add potatoes and cook for 2 minutes, and then add the carrots and pork, and sauté for 2-3 minutes. Stir in the tomato paste and cook for 1 minute, then add soy sauce, chicken stock and bay leaves, and cook for 10 minutes, or until the potatoes are tender. Add hotdogs, sugar and peas and simmer for 3 to 5 minutes. Add spinach (if using), capsicum and season with salt and black pepper. Transfer to a serving bowl and serve hot over steamed rice. Enjoy!
