Chicken-Meatballs Macaroni Soup

Prep Time: 30 mins | Cook Time: 50 mins | Yield: 8 – 10 servings



  • 1 pound lean ground pork
  • ½ cup chopped fresh basil leaves
  • ½ tablespoon chopped fresh oregano leaves
  • 1 tablespoon chopped fresh parsley leaves
  • 1 extra-large egg
  • ¼ cup low-sodium italian bread crumbs
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • Pinch of salt to taste
  • 3 tablespoons vegetable oil


  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 small red onion, diced
  • ¼ cup chopped chives
  • ½ teaspoon fresh or dried rosemary, optional
  • 1 lb. boneless chicken tenders, cut into strips
  • 2 cups elbow macaroni
  • 3 cups No Salt Added chicken broth
  • 1 (14 oz) can evaporated milk
  • 2 cup2 water
  • 3 ribs celery, thinly sliced
  • ¾ cup julienned carrots
  • 5 leaves Napa cabbage, thinly sliced
  • 1 cup cheddar or parmesan cheese, optional
  • ½ cup fresh basil leaves, shredded
  • 10-15 quail eggs, cooked and peeled
  • Salt and ground black pepper to taste


Meatballs –> Combine all ingredients in a medium bowl and mix until well blended. Using your hands, lightly form the meat mixture into 1-inch
meatballs. Heat the oil in a skillet over medium heat. Fry the meatballs over medium-low heat, about 5 minutes, or until lightly  brown on all sides. Don’t crowd the meatballs. Remove the meatballs to a plate and set aside.

Sopas –> Heat the butter in a large soup pot over medium heat. Add the garlic, onions, chives, rosemary and chicken and sauté for 5 minutes. Add the macaroni and stir-fry for 3 minutes. Pour in the broth, milk and water and bring to boil for 5-8 minutes, or until the macaroni is 95% done. Add the celery, carrots and the hard parts of the cabbage. Boil for 1 minute, and then add the cooked meatballs, the remaining cabbage, cheese (if using), basil and quail eggs and cook for another 2-3 minutes. Season with salt and pepper. Turn off the heat. Transfer to a serving bowl and serve hot with buttered toasted bread.
