Cheesy Baked Tilapia

Prep: 25 mins | Cook: 40-45 min | Yield: 4 servings


1 big whole fresh tilapia, cleaned and pat dried
3 tablespoons extra-virgin olive oil
1 ½ tablespoons creole seasoning, recipe follows 
1 (14 oz.) can diced tomatoes
4  gloves garlic, coarsely diced
3 shallots, chopped
½ cup sliced mushrooms, optional
2-3 medium eggplants, sliced, optional
10 pitted black olives, sliced
½ cup fresh basil leaves, chopped
1 tablespoon fresh chives, chopped
1 tablespoon fresh thymes
1 cup Mozzarella cheese
2 tablespoons unsalted butter, cubed


Preheat the oven to 400º F. Lightly grease a shallow 13 x 9 baking dish with olive oil.

Brush the tilapia with 1 tablespoon of olive oil, rub evenly with creole seasoning. Spread half of the tomatoes in a prepared dish. Add half of the garlic, shallots, mushrooms and eggplants over. Add the fish and pour the remaining tomatoes on top. Add all the remaining garlic, shallots, mushrooms and eggplants. Sprinkle olives, basil, chives, thymes, mozzarella cheese and butter being last. Cover with foil and bake for about 40-45 minutes. Serve hot!

2 ½ tablespoons paprika
1 teaspoon salt
2 tablespoons garlic powder
2 tablespoons cayenne pepper
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon dried oregano
1 tablespoon dried thyme

In a small plastic container (with lid), put all ingredients, shake well. Store the remaining seasoning in a cool dry place.
