- 2 cups sweetened coconut flakes
- ⅓ cup butter
- dash of salt
- 3 extra-large eggs
- ½ cup grated cheddar cheese
- 1 (14oz) can condensed milk
- 1 tsp vanilla extract
- ½ cup all-purpose flour
Preheat the oven to 325 degrees F.
In a large bowl, beat the butter, sugar and a dash of salt on a high speed of an electric mixer. Add the eggs, cheese, milk and vanilla; mix until well incorporated. Stir in the flour, mix well. Fold in the coconut.
Drop the batter onto paper-lined muffin pans using either a ice cream scoop, or 2 teaspoons. Bake for 25 to 30 minutes, until golden brown. Cool and serve.
