Honey’s Delicious Fried Rice


Happy weekend everyone!  Our today’s breakfast menu… -fried rice! 🙂

Ingredients: ~Fried Rice~

2 cups cooked jasmine rice
2 tbs. olive oil
2 tbs. butter
4 gloves garlic, minced
1 head garlic, chopped
1 medium red onion, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
2 jalapeno, seeded & copped
1 medium carrot, peeled & chopped
1 tbs. soy sauce
1/2 cup thawed peas
1/4 cup black olives, chopped
1/2 lb. smoked sausage (such as Ekrich), sliced
ground black pepper
3 large eggs

Directions:

Heat a large nonstick skillet/pan over high heat. When hot add 1 tablespoon of the oil and butter. Add the gralic, onion and ginger and cook until lightly browned. Add the sausage to the pan and cook for 1 to 2 minutes. Add the pepper, jalapeno, cook about 2-3 minutes. Stir in peas, olives and rice. Season soy sauce. Cook about 5-7 minutes. In the middle of the pan, fry the eggs with the remaining oil. Season with ground black pepper. Break the eggs up with spatula. Serve while hot.
